Cocktail of the week- Nipperkin at Nijū’s menta – recipe – The good mixer

When discussing classic cocktails with a twist, Angelos Bafas, the head of bars at Nipperkin in London, truly excels in crafting the mojito. “This reinterpretation of the mojito has been a favorite on our menu since day one,” he shares. “It’s delicate, light, refreshing, and incredibly easy to replicate at home.”

Angelos is kind enough to share the recipe for his signature drink, aptly named Menta, which serves one. You’ll need 30ml of gin—Angelos suggests using Hendrick’s—15ml of mint syrup (he makes his own, but if you’re short on time, Monin’s is a solid backup), ginger ale to top off your drink as you prefer, and a slice of cucumber for garnish.

To make it, simply pour the gin and mint syrup into a highball glass filled with ice. Stir gently, then top it off with ginger ale to your liking, and finish with the cucumber slice for a refreshing twist. It’s a delightful combination of flavors that truly captures the essence of summer in a glass.
